What is Hake?

Hake (pronounced as rhyming with bake, lake, and wake) is a slender fish averaging 1 to 8 pounds in weight, but which has been known to grow up to 60 lbs. There are at least a dozen species of Hake, most of which are named for the color of their skin (red, white, silver, etc.). Of the same family as cod and similar in many respects, Hake is more coarsely grained.

The nutritional value of Hake is extraordinary. Per 100 grams of Hake, it yields low calories (75) yet is very high in protein, (18 grams of protein per 100 grams of fish), low in fat (1 gram), and rich in calcium, phosphorus and potassium. This high omega-3 Hake fish is one of the most nutrient dense staples you could add to your diet.

Look for glistening pure white flesh that is free of signs of dryness, grayness and browning. It should have a seawater fresh scent. Hake has clean white flesh that is low in fat and can range in texture from soft to firm. It is sold whole, as fillets or steaks, fresh, frozen, smoked or salted.

Hake is easy to prepare since it has few bones. Hake is a lean fish that is quick to prepare. It is generally pan-fried and drizzled with butter and lemon juice. Hake has thick firm white meat with a delicious delicate flavor. It is versatile and provides excellent results, whether baked, poached, sautéed, grilled or roasted. This fish can be used as a substitute in recipes that call for cod or flounder. It can be prepared like cod.

Cook in a Dutch oven with strips of bacon, onion, garlic, white wine, thyme and parsley. Serve with the reduced cooking juices.

Poaching - put water, lemon juice and salt in a large pan. Bring to the boil, then simmer for 5 minutes. Add the Hake and simmer for 2 minutes. Remove from the heat and leave to finish cooking gently in the cooking liquid.

Fishermen from the provinces on the Bay of Biscay, especially the Basques, introduced this fish into Spanish gastronomy, as for example, hake in potato casserole (Galician style). Coated with flour, it can be cooked in a pan with a little olive oil and served with a green sauce with some clams, or poached in cider with tomatoes and green onions.

September in Florida

Well, what do you know? It's September! The heat and humidity is going to slowly but steadily begin to relent. I'm not kidding! The evenings are already just a bit cooler, the humidity is lightening up, and the nights are getting darker sooner.

Of course, the "snowbirds" have no clue, but we Floridians can discern the difference of two or three degrees hotter or cooler, and we can definitely tell you whether the mugginess is 55% or 50% as easily as we can determine whether we're wearing shoes.

These September nights are decidedly cooler. Yes, the days will still be intensely warm or even hot, but the night time will become dependably cooler and cooler. Relief from the heat is officially en route. It's September.

September means back to school for the youngin's and the beginning of the football season too. The gridiron action gets going, the rivalries steam up, and the tailgating gets creative.

September also means the Football Season is upon us

Keep PaPa Larry's Seafood in mind when you're planning your Saturday afternoon football game picnic/tailgating adventures. (We don't have that ice making machine for nothing, you know.) These marine coolers they make these days seal up so well that they insulate coldness for a full day or more if you stock it with ice and the appropriate gel paks.

The challenge is to keep the lid closed. Between kids and moms...I don't know which group is more irresponsible when simply forgetting to close the cooler when they're done foraging for treats within.

If the cooler lid is ajar, the last ones using the cooler were invariably either kids or a mom. Guaranteed! No question. No debate. Cooler coldness diminishes exponentially WHEN A COOLER IS LEFT OPEN!

So, keep the cooler closed when through, and the contents will be safely maintained in a appropriately cold environment eliminating any spoilage.

Meet Chester!

Be nice to the hired help! Along with PaPa Larry and PaPa Dave behind the counters, you may have seen Chester Gelink. Please welcome Chester aboard at PaPa Larry's Seafood.

For anyone detecting a European accent while chatting with Chester, you're right. Chester hails from Amsterdam, Netherlands, and how he arrived in Orlando was a fortuitous event of sorts.

Chester inexplicably fell overboard while vacationing on a cruise ship near Canaveral and floated ashore buoyed by a couple of inflated Dillard's Shopping Bags - the ones with the rope handles. Though sober and unharmed, Chester, unfortunately wallet-less and waterlogged, hitch-hiked his way to O-Town and spent a couple of secretive, solitary nights in those crates you see out in front of PaPa Larry's Seafood along the shores of Lake Razzano.

The discovery of Chester occurred while PaPa Larry was harvesting the crayfish traps one day around 4 in the morning. Since the traps were peculiarly empty during his harvest, PaPa Larry suspected something was amiss. Sure enough, in one of the decorative crates, PaPa Larry came across Chester breakfasting on live

crayfish and a soggy bag of carrots that appeared to have floated up from the bottom of the lake. Upon closer inspection, each of the crayfish indeed had incriminating trap marks and no price tags attached thereon.

Although momentarily startled, Chester was so starved that he didn't even bother to acknowledge PaPa Larry. He just kept on gnawing away at his makeshift breakfast and tried his best to ignore his future boss because, as Chester will later tell you, at the time he thought PaPa Larry was just another hungry sojourner looking to grab some of Chester's booty.

Well, that was then and this is now. Chester's alive and well. As a matter of fact, Chester's adapted remarkably well considering that the only English words he knew weeks ago were "Super Bowl" , "Bill Clinton", and "French Fries."

So, next time you visit PaPa Larry's Seafood, take a moment to get acquainted with Chester and welcome him aboard. And, if you know a little Dutch, lay it on him.

Removing Stains From Your Furniture

We thought you'd appreciate this valuable information. Of course, we're not worried about fish stains!

Your home furniture can be a big investment. If you have ever wondered how to deal with spills and stains, here is a set of recommendations from Martha Stewart. Think of them as first-aid for your home furnishings.

Wood

Moisture “rings”: Pour table salt on the white rings/haze and cover with a terry cloth. Apply hair dryer on low setting until rings are gone.
Alcohol spills: Blot spills immediately, do not rub. Apply small amounts of ammonia to damage.
Wax spills: Allow to cool and harden, then freeze the wax with an ice cube in a sandwich bag. Use a butter knife to gently scrape off wax.

Fabric

Red wine stains: Cover wine with table salt and let sit until salt has wicked up the wine. Vacuum salt and repeat, as necessary.
Blot remaining stains with damp cloth and dish soap.
General spills: Repeatedly blot with a damp white cloth. Use white cloths to prevent dye transfer.
Oil spills: Cover spill with baking soda and vacuum once absorbed. Blot remaining stains with rubbing alcohol

Leather

General stains: Blot with all-purpose household cleaner. To prevent fading in the upholstery, avoid products with bleach or bleach alternatives.
Scratches: Apply saddle soap to a damp cloth and rub the scratch to help it “blend in”. It won’t go away.

Also, a tip on leather furniture: forget touch-up kits or colored markers. It’s nearly impossible to match leather colors and your repair work will likely make the problem more noticeable.

Just in case you may have missed it, PaPa Larry's Seafood website has compiled a list of seafaring recipes for your enjoyment and cooking adventure. All you have to do to access this award-winning listing is to click on the "Recipes" tab just below our logo at the top of the website.

You may choose to access the recipes individually via MediaFire, or you can view them as a group via Google Docs. Read 'em, print 'em out, collect them, share them...whichever way, we've accumulated them for your grilling (or steaming, cooking, frying, smoking, or kabobbing) pleasure.

And, we are NOT opposed to hearing about good recipes from our readers either. We have, by no means, cornered market on great seafood recipes! If you have a favorite family recipe, or one you've adopted and developed over the years, please don't hesitate to share it with us.

Who knows? The Crabs Are In!

We're talkin' crabs...

Well, our Friday Recipe is gonna feature crabs, East Coast crabs to be exact.

As you may know, the Florida Fishing and Wildlife Conservation Commission (FWC) will declare a "time out" on various species temporarily restricting their harvest so as to give them a respite, or a break of sorts. These breaks usually result in healthy replenishment and abundance. The selected species not only thrive in greater numbers but gain in individual sizes as well.

The FWC is restricting the blue crab harvest which will be in effect for several weeks. However, PaPa Larry's Seafood has secured a supplier for East Coast crabs and this dependable source will keep us "in crabs" for our demanding customers. And that's GOOD!

So, a delightful recipe involving shrimp AND crab sounds timely about now.

Avocado Crab and Shrimp Soup is a chilled dish which you'll find most appropriate for these hot and muggy days of July! We've also included some unusual and interesting ingredients (which can be substituted of course) making this recipe rather unique and special.

Well, since we now have crabs and shrimp in abundance, we know you'll enjoy this week's edition of our Friday Recipe.

PaPa Dave, on behalf of PaPa Larry's Seafood, appeared on the Fishing Florida Radio show this early morning on 740 AM from 7 AM to 9 AM with BooDreaux, Steve Chapman, and Captain Mike Ortega. The panel discusses the outdoors, fishing, the many varieties of fish, fish dishes, how to catch the fish, and the abundant waterways of Florida for two full hours. The fun and fact-filled show also features various local guests each week and PaPa Dave was one of 'em today!

How to prepare different kinds of fish came up often today. So, don't assume the show just covers bait and tackle! Recipes are valued on Fishing Florida Radio and the experts are ready to discuss anything having to do with catching, cleaning, and ultimately serving the fish.

You cannot beat his fresh tomatoes, apples, beans, peppers, lettuce, you name it! And Grouper? Red Snapper? Fresh fish? On ice and displayed out in the open for you to see! Splendid selection every day! Whole fish and fillets. And, did I mention "FRESH?"

Now, do you need Kleenex, a load of cat litter, or Coors beer in cans? Well then, just head on over to Walgreen's for that. You looking for a tool kit, garden supplies, or lumber? Well, there's Home Depot for that too. But, if you want the most delicious fruits and robust vegetables at the best prices in town, and the freshest fish around, head on over to PaPa Larry's Seafood & Produce! You'll keep coming back. That's for sure.
